1 : a condition in lumber in which too rapid drying and setting of the surface results in the shrinkage being inhibited by the still moist interior, the subsequent drying and shrinking of which sets up opposing stresses in the wood
2 : the hardening and darkening of the surface of certain foods caused by too rapid evaporation during dehydration
