Why:

The Thursday before Easter is called Maundy Thursday. Christians commemorate the Last Supper with special services that sometimes include a ritual washing of the feet. Some religious denominations call this Holy Thursday.

Maundy comes from the Latin word meaning "command" or "order" - it's an etymological cousin to mandate. It echoes the words spoken by Jesus to his disciples after washing their feet at the Last Supper, "a new commandment I give unto you, that ye love one another" (John 13:34 Authorized Version).
