Why:

A news story that received some attention this week involved an irate cheerleading coach in Texas calling her squad "highfalutin heifers."

Heifer means "a young cow," and highfalutin means "pretentious" or "fancy." The tirade was recorded on video (and the coach was fired).

Originating in American slang, highfalutin may come from a combination of "high" and "fluting" – with the sound of a flute symbolizing something refined or expensive.
